Ingredients

  • 1 lb (450 g) ground turkey, preferably 93% lean
  • 1/3 cup crumbled feta cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh parsley
  • 1 tablespoon chopped fresh dill (or 1 teaspoon dried)
  • 1 teaspoon dried oregano
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground cumin (optional, for warmth)
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper
  • Cooking spray or a light brush of oil for the air fryer basket
  • Whole wheat buns or warm pita bread
  • Tzatziki sauce or garlic yogurt sauce
  • Sliced tomato, cucumber, and red onion
  • Baby spinach or romaine lettuce
  • Lemon wedges

Method

  1. Preheat the air fryer: Set it to 375°F (190°C). Lightly coat the basket with cooking spray or brush with oil to prevent sticking.
  2. Mix the burger base: In a large bowl, combine ground turkey, feta, red onion, parsley, dill, oregano, garlic, lemon zest, lemon juice, olive oil, cumin (if using), salt, and pepper. Stir just until combined. Do not overmix or the burgers can turn dense.
  3. Shape the patties: Form 4 equal patties about 1/2 to 3/4 inch thick. Press a slight indent in the center of each to help them cook evenly and stay flat.
  4. Air fry: Place patties in a single layer in the preheated basket. Cook for 12–14 minutes, flipping once halfway through, until the internal temperature reaches 165°F (74°C).
  5. Rest briefly: Let the burgers rest for 3 minutes to lock in juices.
  6. Assemble and serve: Add to buns or pitas with tzatziki, tomatoes, cucumbers, red onion, and greens. Finish with a squeeze of lemon for brightness.
